5lbs duck and a package of saffron rice
- Cook a package of saffron rice.
- Mix: 2 tsp salt, 2 tsp pepper, 1 tsp ginger, 1/2 tsp Chinese 5 spice
- Put some inside the cavity.
- Stuff cavity with rice.
- Sew the opening shut (a sail needle and sail thread work very nicely)
- Rub outside with spice mixture.
- Toss in oven at 375° for 13/4 hours.
- Mix 1/4 cup honey and 2 tablespoons soy sauce
- Paint honey/sauce mix on bird (1" chip brush works great) and cook
for another 15 - 20 min.
Eat like you are a starving hyena.
