There are two towns across the Ohio from Cincinnati: Newport and Covington. We had walked into Newport and had breakfast at Mokkas.

What you see on top of the eggs in this picture is my new favoritest food: Goetta. The waitress described it as "A savory granola bar."

See, pork processing places need to do something with the excess pork parts that people won't typically buy in the store. Some companies make it into SPAM, some places on the East coast make it into 'scrapple' and the good folks bordering the Ohio grind all those anuses, snouts, and eyelids into a paste, then mix that paste with "steel cut oats" and call it Goetta. I am experimenting with homemade goetta (except without the anuses, snouts, and eyelids.)
